It's Friday so I have decided to treat myself, and my wonderful family, with zucchini that I purchased at the Greensboro Farmers Curb Market on Wednesday. This is the first time I've had zucchini since last year and I am more than ready for a little taste of summer!
I have numerous recipes for zucchini but there's something about that first harvest that screams 'Fry me!' So I did.
Dredging fresh, sliced zucchini through a perfectly seasoned cornmeal and egg batter before frying allows the vegetable to retain it's the moisture as well as its perfect form and texture. So perfect that the picky eaters in your house will hardly find anything to complain about!
As a rule, I try to keep fried foods to a minimum and prefer to fry it myself when I do want to splurge. I use organic coconut oil because the quality of the oil is just as important as the food being fried.
