4 cups raw almonds
8 cups of filtered water
Soak the almonds for 24 hours in 8 cups of filtered water
After soaking, strain the water and add the almonds to a Vitamix or preferred blender
Add 8 cups of fresh filtered water to the blender
Blend on medium high for 2 minutes
Once blended, strain into a large bowl through a fine mesh strainer or cheese cloth
Once strained, pour into reusable glass bottles and refrigerate
Fresh almond milk has a shelf life of about 3 days. You can adjust the recipe to meet your needs so that you don’t make more than you can drink. But if you do, a lmond milk also freezes well! Pour into portioned silicone cube treys for a perfect smoothie addition.
You can add a sweetener of choice if you like. Homemade almond milk has an intense, nutty taste and I have found I love it with no extra ingredients.
Oh, and glass bottles, it just makes everything taste better. And great for our environment, too!
